What beats zone coverage in 11v11 tackle football?

Modern 11v11 zone is pattern matched, which means defenders carry route rules rather than standing in spots, so the flood concepts that beat small-sided zone can be covered like man. The rhythm throw that makes the defense declare. Whoever takes the flat tells you the structure, and the curl sits in the window behind him. It is on time, which matters here and does not at five a side where nobody is going to hit the quarterback.

Send the seam to carry the middle-field safety and run the dig underneath it. Against a pattern-matching defense the seam is a real threat rather than a decoy, so the safety has to honour it, and the dig runs into the grass he vacated.

Flood is still the answer to a defense that has committed. The difference at eleven a side is that you usually have to make them commit first, with a run fake or a formation, rather than simply outnumbering them the way you can at five.
What changes at this size
Pattern matching is not really zone
At eleven a side the word zone stops describing what the defense is doing. Seven players are in coverage behind a four-man rush, and most of them are matching routes rather than guarding grass: if a receiver runs vertical they cover him like man, and if he breaks off they pass him on. That is why a flood concept that is unanswerable at 5v5 can be covered cleanly here, because the defense is not obliged to leave anybody. Two other things change and both are about the rush. The quarterback has about three seconds rather than as long as he likes, so a concept that develops at sixteen yards has to be protected for. And the run game exists, which means the coverage has to honour it, and play-action moves the underneath defenders in a way nothing in flag football can. Attack the seam the run fake creates, not the seam the alignment shows.

Against a defense that matches everything
Modern zone carries routes like man, so a flood concept can be covered cleanly. If the corner turns and runs with your vertical, treat the down as man and change the page.
When you cannot protect for four seconds
Dagger in particular needs the seam to clear before the dig arrives. Against a rush you cannot handle, the curl-flat is the only one of these three that is genuinely on time.
